Ingredients
Carve the seeds out of the pumpkin
Score the pumpkin in order to allow the pumpkin to cook evenly
Put Pumpkin into a roasting tray and add the Cumin and Coriander
Add the salt and pepper
Cut the onion into quarters and put it in the roasting tray
Trim the ends of the leek
Slice down the middle of the leek
Wash the leek under the tap to get rid of dirt
Dice the leek
Add the leek to the roasting tray
Drizzle the tray with olive oil
Place tray into the oven
Cook at 200 degrees for 40 minutes
Take the pumpkin out of the oven after 40 minutes of roasting
Add content of the tray into the blender.
Add stock before you blend the pumpkin
Blend the pumpkin for 50 seconds, adding stock every 10 seconds
Pour the pumpkin soup into a bowl and enjoy!
