Brown the mince then remove from the pan and drain away any remaining liquid
Sweat the onion, garlic, chilli and thyme in a large pan
Add the dried spices to the onion mix and cook until they release their aroma
Stir in the beef and mix well
Add the fresh and tinned tomatoes and cook down for about 5 minutes
Pour in the beef stock and tomato purée. Drop in the cinnamon and bay leaf. Bring to the boil and leave to simmer.
Look at that cinnamon!
Once the sauce has started to thicken, add the kidney beans and cook for 5-10 minutes
Add the chocolate and cook for a further 2 minutes
Serve on a bed of rice and top the sour cream (I mixed a little corriander, salt and pepper into mine). Enjoy!!
